Corn & Jalapeno Muffins with Beer Bread Mix
Create delicious Muffins using our Italian Cheese Beer Bread Mix. These are so good you will want to make a lot of them (you won't regret it)

  • 1 Italian Cheese Beer Bread Mix Only from Barrett's Ridge
  • 1 up Whole Kernel Sweet Corn
  • 2 Fresh Jalapenos Seeded finely chopped
  • 1/2 g Cup Grated Cheddar Cheese (Optional)

  • 1 Italian Cheese Beer Bread Mix Only from Barrett's Ridge
  • 1 up Whole Kernel Sweet Corn
  • 2 Fresh Jalapenos Seeded finely chopped
  • 1/2 g Cup Grated Cheddar Cheese (Optional)
Instructions
  1. Preheat oven to 190ºC
  2. Prepare Barrett’s Ridge Beer Bread of your choice as per instructions on packet to point 5.
  3. Mix in corn kernels and jalapenos.
  4. Spoon into a lightly greased muffin tin.
  5. Use the cooking time of the pasta to sauté your bacon strips.
  6. Bake for 30 minutes or until golden brown.
  7. Present the dish with some fresh basil leaves on top.
Recipe Notes

* We recommend Italian Cheese Beer Bread Mix but you can use a different one of you choose.
