Chicken Meatball & Feta Flatbread using Garlic & Herb Beer Bread Mix

  • 1 Barrett's Ridge Garlic & Herb Beer Bread Mix (Preferred)
  • 1 350g Plain Yogurt
  • Butter (For Frying)
Toppings
  • Chicken Meatballs
  • Plain Yogurt
  • Feta
  • Red Onion (Thinly Sliced)
  • Cucumber (Sliced into Ribbons)
  • Flat Leaf Parsley
  • olive oil
  • Cracked Black Pepper

  • 1 Barrett's Ridge Garlic & Herb Beer Bread Mix (Preferred)
  • 1 350g Plain Yogurt
  • Butter (For Frying)

  • Chicken Meatballs
  • Plain Yogurt
  • Feta
  • Red Onion (Thinly Sliced)
  • Cucumber (Sliced into Ribbons)
  • Flat Leaf Parsley
  • olive oil
  • Cracked Black Pepper
Instructions
  1. Knead a smooth dough by combining the Beer Bread mix with the yogurt.
  2. Dust bench top with flour, cut dough into 4 pieces, roll into balls, then roll out into about 0.3cm thick rounds.
  3. Heat ½ tbsp butter in a non stick griddle pan over medium heat
  4. Place one flatbread in the pan, cook for around 1- 1½ minutes then flip and cook the other side
  5. Stack cooked bread and keep wrapped with a tea towel and leave to cool
  6. Top the flatbreads with the yoghurt, meatballs, cucumber, onion, parsley and remaining feta.
  7. Sprinkle with pepper to serve

* We recommend Garlic & Herb Beer Bread Mix but you can use a different one of you choose.
